The freshly harvested tubers are processed immediately and refined through lactic acid fermentation, resulting in a balanced, rounded flavor. The product can be drunk undiluted or used to refine smoothies, soups and sauces. The characteristic properties of beet can thus be enjoyed in a variety of ways and used imaginatively in the preparation of dishes.
